Flapjacks
- 175 grams butter
- 175 grams demerara sugar
- 100 grams golden syrup
- 75 grams plain flour
- 1/2 tsp bicarbonate of soda
- 250 grams oats
- 1 tbsp cinnamon powder
- 100 grams raisins
- 1 Egg beaten
- 2 tbsp boiling water
- Preheat fan oven to 170c
- Line flat baking tray with parchment paper
- Add the butter, sugar and syrup into a pan and heat until the sugar is melted
- Remove from heat and add the flour, bicarbonate of soda, oats, cinnamon powder and raisins.
- Add the beaten egg and boiling water and mix well
- Dampen hands and make into flattened balls placing on the baking tray allowing plenty of room for expanding
- Bake for 12-15 minutes or until golden brown and still soft
