Mushroom Gravy
- 1 tablespoon nonhydrogenated margarine
- 8 to 10 ounces white or cremini mushrooms, cleaned and sliced
- 2 tablespoons unbleached white flour
- 1 cup canned vegetable stock
- Salt and freshly ground pepper to taste
- Heat the margarine in a medium saucepan.
- Add the mushrooms and cook, covered, until they are done to your liking.
- Dissolve the flour in enough cold water to make a smooth paste.
- Add it to the saucepan along with the vegetable stock and whisk together.
- Bring to a simmer, and cook gently until the mixture has thickened.
- Season with salt and pepper, and serve.
