Waffles

  1. Preheat a waffle maker.
  2. Preheat the oven to 200F (95C).
  3. Whisk the flour, sugar, and baking powder together in a bowl to combine.
  4. Make a well in the center.
  5. Whisk the milk, melted butter, egg yolks, and vanilla in another bowl.
  6. Pour into the well and whisk, until just combined.
  7. Do not overbeat.
  8. Beat the egg whites until soft peaks form.
  9. Fold the whites into the batter.
  10. Following the manufacturer's instructions, ladle the batter into the center of the waffle iron and close the lid.
  11. Cook until the waffles are golden and the batter stops steaming.
  12. Serve waffles immediately, or transfer to a baking sheet and keep warm in the oven while making the remaining waffles.
  13. Variations:
  14. Buttermilk Waffles: Substitute buttermilk for the milk and add another 1 tsp baking powder.
