Crab Cream Croquettes Made with Healthy Soy Milk

  1. Slice the onion.
  2. Saute the onion with margarine in a frying pan.
  3. When the onion is translucent, add the flour and continue sauteing.
  4. If you cook it thoroughly here until any flouriness is gone, it won't form lumps later.
  5. Add soy milk little by little, in 4-5 batches.
  6. Mix well to form a paste.
  7. Season the paste with salt and pepper.
  8. Add the canned crabmeat, liquid and all.
  9. Mix for 2 to 3 minutes over heat.
  10. The sauce may be a bit loose here, but it will firm up when it's chilled so don't worry.
  11. Put the sauce into a shallow container, and chill in the refrigerator for 3 hours.
  12. Divide the sauce and form into croquettes.
  13. Coat each one with flour, egg and panko, and deep fry in 355F/180C oil until golden brown.
  14. Done!
