Curried noodle salad

  1. Fry chopped onions in oil until soft, add ground spices and cook for a few minutes to bring out the flavour.
  2. Meanwhile boil noodles until al dente and drain and leave to cool.
  3. Add onion mixture and chopped peaches to noodles and add chutney and mayonaise and mix until noodles evenly coated.
  4. If too dry add some of the tinned peach juice.
