Crisp Salmon Croquettes Recipe

• 1 lg. can salmon
• 2 Large eggs
• 1/4 c. corn meal
• Salt and pepper
• 1/4 c. minced onion (optional)
• Cracker crumbs

1. Mix the first 5 ingredients together with sufficient cracker crumbs to stick together to create patties.
2. Fry in oil till golden.
