Couscous Tabbouleh

  1. Cook couscous according to package directions.
  2. Once all the liquid has absorbed, drizzle 1 Tbsp extra virgin olive oil and 3 Tbsp lemon juice over the couscous and fluff with a fork.
  3. Add your veggies, pine nuts and cheese, and fluff again.
  4. Add the parsley, and fluff again.
  5. Taste and adjust lemon juice, olive oil, salt and /or pepper to your taste.
  6. Chill for at least 30 minutes before serving.
