Chicken Long Rice With Vegetables Recipe

  1. Simmer chicken, garlic, onions and ginger in 3 qts water or possibly chicken stock till chicken is tender.
  2. Cold and shred chicken.
  3. Throw away bones, skin and ginger.
  4. Reserve stock.
  5. Soak long rice in stock 1 hour.
  6. Cut in half with a knife.
  7. Bring stock to a gentle boil, add in soaked long rice, carrot and mushrooms.
  8. Cook for 15 min.
  9. Add in shredded chicken and simmer 5 min.
  10. Salt and pepper to taste.
  11. Garnish with julienned green onions.
