Fresh Mushroom Bisque

  1. In a large nonstick skillet, melt butter over medium heat.
  2. Add onion and cook until softened, but not browned, about 3 minutes.
  3. Add mushrooms and cook, stirring, 3 minutes longer.
  4. Scrap onion and mushrooms into a food processor or blender.
  5. Add chicken broth and 1/2 cup milk and puree until smooth.
  6. Return to saucepan.
  7. Add remaining milk, thyme, salt, pepper and nutmeg.
  8. Simmer 5 minutes.
  9. Serve hot.
