Black Beans Recipe

  1. Sort and wash beans.
  2. Combine beans, green pepper and 2 Tbsp.
  3. onion in a large Dutch oven.
  4. Cover with water and cook.
  5. When boiling good, turn heat down and simmer for about 2 hrs till beans are tender.
  6. Combine remaining onion, garlic, oregano and cumin in a small bowl.
  7. Mash mix using a fork.
  8. Stir in vinegar and salt.
  9. Add in to beans; simmer uncovered for about 20 min.
  10. Serve over rice or possibly noodles.
  11. (A low-fat, no-cholesterol recipe.)
