Black Beans Recipe
- 1 (16 ounce.) pkg. dry black beans
- 1 med. size green pepper, minced
- 1/4 c. minced onion, divided
- 2 1/2 quarts. water
- 2 cloves garlic, chopped
- 1/2 teaspoon dry whole oregano
- 1/4 teaspoon grnd cumin
- 1 teaspoon salt
- Sort and wash beans.
- Combine beans, green pepper and 2 Tbsp.
- onion in a large Dutch oven.
- Cover with water and cook.
- When boiling good, turn heat down and simmer for about 2 hrs till beans are tender.
- Combine remaining onion, garlic, oregano and cumin in a small bowl.
- Mash mix using a fork.
- Stir in vinegar and salt.
- Add in to beans; simmer uncovered for about 20 min.
- Serve over rice or possibly noodles.
- (A low-fat, no-cholesterol recipe.)
