Chicken with Fresh Mint-Tomato Salsa

  1. Pour 1/4 cup dressing over chicken in shallow dish; turn chicken to evenly coat both sides of each breast.
  2. Refrigerate 10 min.
  3. Meanwhile, combine tomatoes, cheese, mint and remaining dressing.
  4. Remove chicken from dressing; discard dressing.
  5. Cook chicken in large nonstick skillet on medium heat 6 to 7 min.
  6. on each side or until done (165 degrees F).
  7. Cover platter with spinach; top with chicken and tomato mixture.
