Chicken with Fresh Mint-Tomato Salsa
- 1/2 cup KRAFT Tuscan House Italian Dressing, divided
- 4 small boneless skinless chicken breasts (1 lb.), pounded to 1/4-inch thickness
- 2 cups grape tomatoes, chopped
- 1/2 cup ATHENOS Crumbled Reduced Fat Feta Cheese
- 2 Tbsp. finely chopped fresh mint
- 4 cups tightly packed baby spinach leaves
- Pour 1/4 cup dressing over chicken in shallow dish; turn chicken to evenly coat both sides of each breast.
- Refrigerate 10 min.
- Meanwhile, combine tomatoes, cheese, mint and remaining dressing.
- Remove chicken from dressing; discard dressing.
- Cook chicken in large nonstick skillet on medium heat 6 to 7 min.
- on each side or until done (165 degrees F).
- Cover platter with spinach; top with chicken and tomato mixture.
