Serrano Ham and Swiss Cheese Frittata

  2. Heat the boiler.
  3. Heat the olive oil in a large, ovenproof skillet over medium heat.
  4. Add the onion and cook until clear and translucent, about 1 minute.
  5. In a bowl whisk together the eggs, ham, 1/3 cup of the cheese, thyme, and parsley.
  6. Season with salt and pepper.

  8. Add egg mixture to onions and cook, without stirring, about 8 minutes, or until the bottom and edges are set but center is still soft.

  10. Sprinkle the remaining cheese on the top of the frittata.
  11. Broil about 4 inches from the heat until the cheese is bubbling, about 1 minute.
  12. Transfer to a cutting board, cut into wedges, and serve.
