Black Eyed Pea Salad Recipe
- 2 (15 ounce.) cans black eyed peas, rinsed & liquid removed
- 2 green onions
- 1 red bell pepper, seeded & finely minced
- 1/2 green bell pepper, seed & finely minced
- 1/4 c. minced fresh parsley
- 1 clove garlic, peeled & finely chopped
- In large bowl combine peas, onions, red and green peppers, parsley and garlic.
- In small bowl whisk together the dressing ingredients.
- Pour over the mix, toss and serve immediately.
