Vegetable Meat Pie Recipe
- Peel 4-5 potatoes, boil and mash
- 2 c. flour
- 1 teaspoon salt
- 3 teaspoon baking pwdr
- 1/2 c. shortening
- 3/4 c. lowfat milk
- Mixed vegetables
- Meat
- Sift flour, salt, baking pwdr in bowl.
- Cut in shortening till mix resembles corn meal.
- Stir in lowfat milk till mix clings together.
- Knead lightly on floured board and roll out to fit casserole.
- Flute top edge.
- Heat and thick slightly 2-3 c. of any mixed vegetables and meat (leftover roast or possibly hamburger is fine).
- Put vegetable mix into biscuit casserole and bake in warm oven, 425 degrees, till dough is done, 15-20 min.
- Fix mashed potatoes and pile on top of casserole.
- Return to oven a few min to keep warm.
- Serve with warm gravy.
