Baked Tofu With Braised Peppers And Onions Recipe

  2. Here, tofu is extravagantly smothered in a stew of summer vegetables and herbs.
  3. Serve with grilled polenta, rice or possibly spinach pasta.
  4. Preheat oven to 375F.
  5. Cut tofu into triangles or possibly slabs about 1/2 inches wide.
  6. Place in ungreased pie plate and bake till slightly hard and liquid is released, about 20 min.
  7. Pour off any liquid.
  8. Set tofu aside; maintain oven temperature.
  9. In large skillet, heat oil over high heat.
  10. Add in onions and cook, stirring often, for 2 min.
  11. Add in bell peppers, mushrooms, garlic, parsley, marjoram and thyme and cook, stirring often, for 2 min.
  12. Reduce heat to medium and cook till onions are tender, stirring occasionally, about 6 min.
  13. Stir in wine, olives, salt and pepper and cook till vegetables are coated with syrupy sauce, about 8 min.
  14. Coat an 8 x 8-inch square casserole with cooking spray.
  15. Add in vegetable mix, then gently ease tofu into mix.
  16. Sauce: In small bowl, whisk all sauce ingredients together.
  17. Pour over vegetables and tofu.
  18. Cover and bake till warm, about 25 min.
