Acai-Chia Jam & Goat Cheese Crostini
- 1/2 cup acai berry puree
- 3 tablespoons chia seeds
- 3 tablespoons Cane sugar
- 2 tablespoons balsamic vinegar
- 1 multigrain baguette, cut into 1-inch slices
- 1/4 cup olive oil
- Salt and pepper
- 3/4 cup soft goat cheese
- fresh chive or sage leaves, for garnish
- Preheat the oven to 400F.
- To prepare the jam, in a small saucepan, combine all the jam ingredients.
- Bring to a boil, lower the heat, and simmer until the jam is thick, about 5 minutes.
- Remove from the heat, transfer to a heatproof bowl, and store in the fridge while you prepare the crostini.
- To prepare the crostini, using a pastry brush, brush the olive oil onto both sides of each slice of the bread.
- Place on a baking sheet.
- Sprinkle each slice with salt and pepper to taste.
- Toast in the oven for 5 to 7 minutes, or until golden brown and crispy.
- Remove from the oven, and spread about a tablespoon of goat cheese and a tablespoon of jam onto each toast slice.
- Top with chives or sage leaves.
- Serve immediately.
