Bacon Avacado & Spinach Salad with Yogurt Lime Poppyseed Dressing
- 3 cup baby spinach
- 4 slice bacon, cooked and chopped
- 1 1/2 cup strawberries, hulled and chopped
- 1 avacado, chopped
- 1/4 cup sliced almonds
- 1 tbsp goat cheese, crumbled
- 1/4 cup greek yogurt
- 1/4 cup mayonnaise
- 2 tbsp white wine vinegar
- 1 tbsp honey or agave syrup
- 1 tsp poppyseeds
- 1/4 tsp black pepper
- 1 lime, juiced and zested
- Combine all salad ingredients (reserve 1 tbsp of almonds and bacon bits for topping) in a large bowl and toss well.
- Set aside.
- Mix all ingredients for dressing in a seperate bowl and dress salad.
- Garnish top of salad with sliced almonds and bacon crumbles.
