Athlete's Delight Recipe
- 2 Tbsp. Extra virgin olive oil
- 1 med Onion
- 2 x Garlic cloves
- 2 med Potatoes, diced
- 2 c. Turnip, diced
- 1 1/2 c. Tomatoes, diced
- 1 c. Water
- 2 Tbsp. Parsley
- 1/2 tsp Oregano
- 1/2 tsp Marjoram
- 1 tsp Basil
- 1 pch Mint
- 1 pch Dill Fettuccine
- Heat oil in a large pot.
- Add in onion & garlic & saute/fry gently for 5 min.
- Add in potatoes & turnip & continue to saute/fry for another 3 min, stirring occasionally.
- Fold in minced tomatoes, raise heat & bring to a gentle boil.
- Stir in the water & the rest of the ingredients, except for the fettuccine.
- Simmer for 35 min or possibly till all the vegetables are tender.
- Add in more water if necessary.
- Meanwhile cook fettuccine according to package instructions.
- When cooked, serve vegetables over cooked fettuccine.
