Spaghetti and Meatballs
- 2 (28 ounce) cans crushed tomatoes
- 1 (28 ounce) can diced tomatoes
- 0.5 (28 ounce) can water (or more as needed)
- 1 (12 ounce) can tomato paste
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 3 garlic cloves, minced
- 1 tablespoon sugar
- 1 teaspoon salt
- 14 teaspoon ground black pepper
- 1 teaspoon dried Italian seasoning
- 1 teaspoon garlic powder
- 3 tablespoons dried parsley
- 3 tablespoons dried basil
- 3 tablespoons dried oregano
- 12 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 lb lean ground beef
- 1 lb ground pork
- 2 eggs, lightly beaten
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 14 cup dried parsley
- 13 cup grated parmesan cheese
- 12 cup dry breadcrumbs
- 12 teaspoon salt
- 14 teaspoon ground black pepper
- 1 14 cups vegetable oil (for frying meatballs)

- Sauce: In a large pot saute onion and green pepper in olive oil over medium heat until tender but not burned.
- Add garlic and stir until fragrant, then reduce heat to medium low and add remaining ingredients.
- Cover sauce and simmer while preparing meatballs.
- Meatballs: Combine all dry ingredients in a large mixing bowl and then fold in ground beef and pork.
- Add beaten eggs and continue folding until thoroughly mixed.
- Form into 1" meatballs and then fry in small batches in vegetable oil over med-high heat in a cast iron skillet until browned and then drain on paper towels.
- Add all meatballs to sauce and then increase heat to a light boil stirring frequently, then reduce heat to low and simmer for 2 hours or until desired consistency.
- Salt, pepper, and sugar to taste prior to serving over cooked pasta.
