Oatmeal Bars with Dates and Walnuts

  1. Preheat the oven to 350F.
  2. Whisk together the ground oats, flour, 1 cup whole oats, baking powder, salt, cinnamon, and allspice in a large bowl; set aside.
  3. Put the brown sugar and butter in the bowl of an electric mixer fitted with the paddle attachment.
  4. Beat on medium speed until pale and fluffy, about 5 minutes.
  5. Mix in the eggs and vanilla, scraping down the sides of the bowl as needed.
  6. Reduce speed to low.
  7. Add the oat mixture; mix until just combined.
  8. Mix in the walnuts and dates.
  9. Coat a 9 x 13-inch baking dish with cooking spray.
  10. Spread the batter evenly in the dish.
  11. Scatter the remaining 1/2 cup whole oats over the top.
  12. Bake until golden and a cake tester inserted into the center comes out clean, about 35 minutes.
  13. Cool completely in the pan on a wire rack; cut into bars.
