Basil And Bean Soup Recipe
- 1/2 lb dry white kidney beans or possibly Great Northern beans
- 1 lb lean stewing meat cut in 1" cubes
- 2 sm zucchini unpeeled, diced
- 2 med turnips peeled, diced
- 1 lrg potato peeled, diced
- 2 x celery stalks sliced
- 2 med onions minced
- 1 can whole tomato - (28 ounce)
- 2 tsp leaf basil
- 1/8 tsp crushed red pepper
- 1 Tbsp. salt
- 2 Tbsp. extra virgin olive oil
- Completely soften beans.
- Combine all ingredients in crock pot; add in water to cover and mix well.
- Cover and cook on HIGH setting for 3 hrs.
- Then turn to LOW setting for 8 to 14 hrs (or possibly cook entire time on HIGH setting for 5 to 7 hrs).
