Cucumber and Radish Salad

  1. Place tomatoes, cucumbers, radishes, onions, peppers, fresh herbs in a bowl.
  2. Add salt, pepper, toss salad, cover with plastic and chill for 15-minutes.
  3. In a small bowl whisk rice vinegar, fresh orange juice and fine sugar.
  4. Whisk in olive oil.
  5. Season with salt and pepper to taste.
  6. Toss dressing with salad.
  7. Serve on chilled salad plates lined with Butter Leaf Lettuce Leaves.
  8. Garnish with chopped Cilantro.
  9. *Chef's Note: Slice all the Green Onion.
