Braised Prawns In Spring Onion And Ginger Sauce Recipe
- 225 gm prawns preferably uncooked braising sauce
- 1 1/2 x spring onion finely minced
- 2 tsp fresh ginger finely minced
- 1 Tbsp. dry sherry or possibly rice wine
- 1 Tbsp. light soy sauce
- 70 ml chicken stock
- Peel the prawns and if you are using large uncooked ones cut them to remove the fine digestive cord.
- Wash the prawns and pat them dry with kitchen paper.
- Combine the braising sauce ingredients together in a wok or possibly large saucepan and bring the mix to the boil.
- Turn the heat down to low and simmer for 2 min.
- Then add in the prawns and stir mixing them in well.
- Cover the pan and braise for 2 min.
- Serve at once or possibly allow to cold and serve cool.
- Serve as part of a meal with Country style Chicken and rice.
- This method of quick braising is very simple.
- Street vendors or possibly sidewalk cafes throughout southern China sell this dish because it is uncomplicated and takes only min to prepare.
- It is also excellent cool and makes a very nice dish for an exotic picnic.
