Vegetable Jalfrasie

  1. Chop onion; cut green peppers, tomatoes, broccoli, and cauliflower into 1 inch cubes.
  2. Melt butter and saute onion.
  3. Add all the remaining vegetables and stir-fry for about 5 minutes over medium heat.
  4. Add the spices and vinegar.
  5. Stir in the tomato puree, and simmer for about 5 minutes.
  6. Season to taste with salt and fresh ground pepper.
