Skinnier General Tso Chicken
- 1 1/2 lb boneless & skinless Chicken Breast
- 1/4 cup all-purpose flour
- 3 each eggs, whisked
- 2 1/2 cup crushed Corn Flakes
- 1/3 cup Hoisin Sauce
- 1 1/2 cup chicken broth
- 1/4 cup Rice Vinegar
- 3 1/2 tbsp soy sauce
- 4 tbsp brown sugar
- 2 tbsp cornstarch
- tsp Sriracha sauce
- 1/2 tbsp sliced green onion scallion
- 2 cup steamed broccoli
- 4 cup cooked rice
- Slice chicken breasts into bite sized chunks.
- Preheat oven to 450F
- Set up a dredging station: Cubed chicken, flour, whisked egg, corn flakes, greased baking sheet.
- First coat the chicken in flour, then dip it in the whisked egg, then coat it with corn flakes.
- Press down on the corn flakes to make sure they stick.
- Spray a baking sheet with cooking spray and set the chicken on.
- Once all of the coated chicken is on the baking sheet- spray over with cooking spray.
- Bake for 15 minutes until golden brown.
- While cooking the chicken, mix the sauce ingredients in a large pot over medium high heat until thick.
- I made my Hoisin Sauce from scratch with this recipe.
- Prepare the optional garnishes
- Once the sauce and chicken are done, toss the chicken and sauce together in the large pot.
- Garnish and enjoy!
