Bananas Calypso Recipe

  1. In a small bowl combine sugar, melted butter, lime juice, and cinnamon.
  2. Brush bananas with about 1/4 c. of butter mix.
  3. Place bananas on center of cooking grate.
  4. Grill 2 to 4 min, turning once halfway through grilling.
  5. Slice grilled bananas and place slices in a flameproof dish.
  6. Pour remaining 1/2 c. butter mix into dish.
  7. Place dish on center of cooking grate.
  8. Cook 5 min.
  9. Remove dish from grill.
  10. Quickly pour rum over bananas.
  11. Light rum with long kitchen matches.
  12. After flames die out, serve immediately over ice cream.
  13. This recipe yields 4 servings.
