After School Snack Muffins Recipe
- 12 x Baking c.
- 2 c. Raisin bran cereal
- 1/2 c. Boiling water
- 3/4 c. All-purpose flour
- 3/4 c. Whole weat flour
- 2 tsp Baking pwdr
- 1 1/2 tsp Cinnamon
- 1/4 tsp Salt
- 3/4 c. Lowfat milk
- 1/2 c. Shredded carrot
- 1/3 c. Brown sugar
- 1/4 c. Vegetable oil
- 1 x Egg, beaten
- Preheat oven to 400*.
- Place baking c. in muffin pan; set aside.
- IN a small bowl, combine cereal and water; set aside.
- In a medium bowl, combine flours, baking pwdr, cinnamon and salt.
- Add in remaining ingredients to cereal mix; mix well.
- Add in cereal mix to flour mix; stir just till dry ingredients are moistened.
- Spoon batter into bake c., filling 3/4 full.
- Bake 20-25 min.
- Serve hot.
- Makes 12 muffins.
