Cherry Almond Glazed Pork Recipe

  1. Rub roast with salt and pepper.
  2. Place on rack in shallow baking pan.
  3. Roast uncovered, in slow 325 degree oven, for about 2 to 2 1/2 hrs.
  4. Meanwhile, combine cherry preserves, corn syrup, vinegar, salt, cinnamon, nutmeg and cloves.
  5. Heat to boiling, stirring frequently.
  6. Reduce heat and simmer 2 min.
  7. Add in almonds.
  8. Keep sauce hot.
  9. When meat has roasted 2 to 2 1/2 hrs, spoon sufficient warm cherry sauce over roast to glaze, return to oven for 30 min or possibly till meat thermometer registers 170 degrees.
  10. Serve remaining sauce with roast.
  11. Serves 6.
