Lemon and Parmesan Fish

  1. Thaw fish if frozen.
  2. Coat a 15 by 10 inch baking pan with cooking spray.
  3. Place fish in prepared pan, tucking under any thin edges.
  4. In a small bowl combine corn flakes, Parmesan cheese, butter, lemon peel, and pepper.
  5. Sprinkle crumb mixture over the top of fish.
  6. Bake in a 450 oven for 4-6 minutes per 1/2 inch thickness of fish or until fish flakes easily with a fork and crumbs are brown.
  7. Serve with lemon wedges.
