Apple Raisin Oatmeal Cookies Recipe
- 1 c. whole wheat flour
- 3/4 c. wheat germ
- 1/2 c. rolled oats
- 1 Tbsp. baking pwdr
- 1 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1 c. apple juice concentrate, thawed
- 1/4 c. vegetable oil
- 1 x egg (or possibly 2 egg whites)
- 2/3 c. raisins
- 1/4 c. dry apples
- Preheat oven to 375 degrees.
- In a large mixing bowl, combine the flour, wheat germ, oats, baking pwdr, cinnamon and ginger.
- In a blender jar, combine the juice concentrate, oil, egg, raisins and dry apples.
- Blend at medium speed till the raisins and apples are minced.
- Stir this juice mix into the dry ingredients and combine thoroughly.
- Drop batter by the heaping teaspoonful onto nonstick cookie sheets.
- Flatten each with a fork and bake 8 to 10 min till the top springs back at your touch.
- Don't brown or possibly crisp.
- Cold slightly before removing from cookie sheets to wire racks.
