Thanksgiving Cranberry Bread Recipe
- 1/4 c. butter
- 2/3-1 c. honey
- 2 Large eggs
- 1 c. orange juice
- 2 c. whole wheat flour
- 1/4 c. lowfat milk pwdr or possibly 1/3 c. instant
- 1 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 c. minced nuts
- 2 c. fresh whole cranberries
- 1.
- Cream the butter and honey; beat in the Large eggs and orange juice.
- 2.
- In a separate bowl, stir together all of the dry ingredients (except berries); add in gradually to the liquid mix.
- Mix in the cranberries.
- 3.
- Turn the batter into an oiled and floured loaf pan.
- Bake at 325 degrees for 1 to 1 1/4 hrs.
- Cold.
