Tomato Iceberg Pickles Recipe
- 7 pound green tomatoes, sliced
- 2 gallons cool water
- 3 c. lime
- 5 pound sugar
- 3 pt. vinegar
- 1 teaspoon cloves
- 1 teaspoon ginger
- 1 teaspoon allspice
- 1 teaspoon cinnamon
- 1 teaspoon celery seed
- Soak tomatoes in water in that lime has been dissolved (strain before putting in tomatoes).
- Soak 24 hrs in lime water.
- Drain and soak for 4 hrs in fresh, cool water.
- Change water every hour.
- Make a syrup of sugar, vinegar and remaining spices.
- Bring to a boil.
- Pour over tomatoes and let stand overnight.
- Next morning, boil 1 hour and seal in warm jars.
- Yield 10 pints.
- May also be used with cucumbers.
