Tomato Iceberg Pickles Recipe

  1. Soak tomatoes in water in that lime has been dissolved (strain before putting in tomatoes).
  2. Soak 24 hrs in lime water.
  3. Drain and soak for 4 hrs in fresh, cool water.
  4. Change water every hour.
  5. Make a syrup of sugar, vinegar and remaining spices.
  6. Bring to a boil.
  7. Pour over tomatoes and let stand overnight.
  8. Next morning, boil 1 hour and seal in warm jars.
  9. Yield 10 pints.
  10. May also be used with cucumbers.
