Chocolate Avocado Pudding
- 14 cup butter
- 1 cup avocado puree
- 1 cup confectioners sugar
- 12 cup cocoa powder
- 1 teaspoon vanilla extract
- 14 cup cornstarch or 14 cup arrowroot
- In a medium saucepan, melt the butter over low heat.
- Stir in the avocado puree, sugar, cocoa powder , and vanilla.
- Cook, mashing well with a spoon to smooth out any lumps of avocado, until the mixture thickens, 3 to 4 minutes.
- Off the heat, gradually stir in the cornstarch.
- Serve warm.
