Healthy Spinach Artichoke Dip

  1. Preheat oven to 350 F.
  2. For this recipe, you need a small or medium sized blade for your food processor.
  3. Add cottage cheese into the food processor and blend it until smooth.
  4. Add the cream cheese and blend again until smooth.
  5. Set aside in a small bowl.
  6. Take the onion and drained artichoke hearts and chop them in the food processor.
  7. Stop just before they become pureed.
  8. Pour into the bowl with the cottage cheese and cream cheese mixture.
  9. Add the spinach, garlic powder, pepper, and both shredded cheeses.
  10. Mix well.
  11. Pour into a greased pan (I used a 9x9 square pan).
  12. Bake at 350 F for 20 minutes or until bubbling.
  13. Remove dish from the oven and allow dipe to cool for about 10 minutes before serving (this will allow everything to set a bit).
  14. Dig in!
  15. Recipe makes 6 servings; 140 calories per 1/2 cup serving.
