Healthy Spinach Artichoke Dip
- 1 cup 1% Cottage Cheese
- 4 ounces, weight Fat-free Cream Cheese
- 1/2 whole Yellow Onion, Peeled And Cut Into Wedges
- 14 ounces, weight Canned Artichoke Hearts (marinated In Water And Salt), Drained
- 9 ounces, weight Frozen Spinach, Thawed, Drained And Roughly Chopped
- 3/4 teaspoons Garlic Powder
- 1/2 teaspoons Black Pepper
- 1/2 cups Shredded Italian Mix Cheese
- 1/2 cups Shredded Part Skim Mozzarella
- Preheat oven to 350 F.
- For this recipe, you need a small or medium sized blade for your food processor.
- Add cottage cheese into the food processor and blend it until smooth.
- Add the cream cheese and blend again until smooth.
- Set aside in a small bowl.
- Take the onion and drained artichoke hearts and chop them in the food processor.
- Stop just before they become pureed.
- Pour into the bowl with the cottage cheese and cream cheese mixture.
- Add the spinach, garlic powder, pepper, and both shredded cheeses.
- Mix well.
- Pour into a greased pan (I used a 9x9 square pan).
- Bake at 350 F for 20 minutes or until bubbling.
- Remove dish from the oven and allow dipe to cool for about 10 minutes before serving (this will allow everything to set a bit).
- Dig in!
- Recipe makes 6 servings; 140 calories per 1/2 cup serving.
