AMIEs Maccheroni Green Pasta

  1. Cook the pasta according to the packet directions, until al dente.
  2. Drain and return to pan.
  3. Meanwhile, cook the vegetables in boiling water for 3-5 minutes.
  4. Set aside.
  5. Heat the oil in a large frying pan over low-medium heat.
  6. Add the garlic and saute until softened.
  7. Increase the heat to medium.
  8. Add the sausage meat, stirring to break up, and cook for 5 minutes, until browned.
  9. Add the broccoli and celery, decrease the heat to low and cook for 10 minutes, until flavors have developed.
  10. Season with salt and pepper.
  11. Pour the sauce over the pasta in the pan.
  12. Toss to coat while cooking for another 2 minutes in medium heat.
  13. Stir the eggs with salvia leaves and a dash of salt.
  14. Pour the beaten eggs over the pasta and toss to coat, stirring well to dustibute egg mixture all over the pasta.
  15. Serve, share and enjoy!
