Chutney Chicken and Pistachio Salad
- 1 lemon
- 12 cup mayonnaise
- 14 cup mango chutney
- 1 tablespoon Dijon mustard
- 2 cups diced cooked chicken (rotisserie or roasted chicken)
- 1 cup red seedless grapes, halved
- 2 -3 stalks celery, roughly chopped
- 1 small red onion, finely chopped
- 13 cup pistachios
- salt
- fresh ground pepper
- Make the dressing: grate 1 teaspoon zest and squeeze 1 T juice from the lemon into a large bowl.
- Add the mayonnaise, chutney, and mustard; stir to combine.
- Assemble: add the chicken, grapes, celery, onion, and pistachios to the dressing.
- Stir gently to combine.
- Season to taste with salt and pepper.
- Divide among salad plates or bowls and serve.
