Spicy Veggie And White Bean Quinoa
- 2 tablespoons olive oil
- 1 cup matchstick-cut carrots
- 3 stalks celery, chopped
- 1 yellow bell pepper, chopped
- 1 small red onion, chopped
- 1 (10 ounce) can white beans, drained and rinsed
- 1 (10 ounce) can diced tomatoes, with liquid
- 1 cup vegetable broth
- 1 cup quinoa
- 4 ounces hot giardiniera
- 1 teaspoon garlic powder
- salt and ground black pepper to taste
- Heat oil in a deep pan over medium-high heat. Saute carrots, celery, bell pepper, and onion until crisp-tender, about 5 minutes. Add beans, tomatoes, broth, quinoa, giardiniera, garlic powder, salt, and pepper. Bring to a boil. Turn down to a simmer and cook until most of the liquid has been absorbed, about 20 minutes.
