Alaskan Black Cod With Acacia Hone Recipe

  1. To prepare the marinade: Combine honey, grape seed oil, soy sauce and white wine vinegar.
  2. Cover the fish with the marinade, cover and chill for 24 hrs.
  3. Remove the fish and place in a pan.
  4. Caramelize the fish under the broiler and finish in a preheated 400 degree oven till the fish reaches medium.
  5. Reserve some of the marinade to use for sauce.
  6. To prepare the spinach: Heat the butter in a warm saute/fry pan.
  7. When the butter begins to brown, add in the garlic.
  8. Add in the spinach.
  9. Cook till tender.
  10. Season with nutmeg, salt, and pepper, to taste.
  11. Set aside.
  12. Heat reserved marinade to boiling point, reduce heat and simmer for two to three min.
  13. To assemble the plate: In the center of each of 6 large bowls divide the spinach.
  14. Place a portion of fish on top and pour approximately 2 Tbsp.
  15. of reserved marinade, over the top of each fish.
  16. This recipe yields 6 servings.
  17. Comments: If Chilean Sea Bass is available, it makes an excellent substitute for the Black Cod.
