Lemoney Chicken

  1. Salt the chicken inside out.
  2. Mix butter and lemon zest.
  3. Rub butter mixture on to the chicken an inside the skin.
  4. Slice the lemon and insert it in side the chicken.
  5. tie the chicken like a parcel and insert lemon slice between the strings.
  6. Sprinkle generously rosemary onto the chicken.
  7. Roast at 160c-180c for 1 1/2 hours.
