Easy Chicken Parmigiana Recipe

  1. In small saucepan, dissolve cornstarch in tomatoes.
  2. Cook, stirring constantly, till thickened; keep warm.
  3. Combine bread crumbs and Parmesan cheese.
  4. Lb.
  5. chicken to 1/4 inch thick; dip in crumbs, coating well.
  6. Fry coated chicken in oil for 3-4 min on each side.
  7. Drain oil and return chicken to pan.
  8. Place hot tomatoes over chicken and then cover with Mozzarella cheese.
  9. Cover and cook till cheese melts, 5-10 min.
