Harvest Soup

  1. In a large saucepan, saute the mushrooms and onion in butter until tender.
  2. Stir in the flour and curry powder until blended.
  3. Gradually add the broth.
  4. Bring to a boil; cook and stir for 2 minutes or until thickened.
  5. Add the pumpkin, milk, honey, salt, pepper, and nutmeg.
  6. Heat through.
  7. Garnish with Chives (optional).
  8. Yield 7 servings.
