Brown Butter Tortellini with Toasted Garlic and Asparagus

  1. Cook tortellini according to package directions.
  2. Drain.
  3. Meanwhile, using a vegetable peeler, remove 3 strips of zest from lemon.
  4. Thinly slice zest.
  5. Melt butter in large skillet over medium heat.
  6. Add asparagus and garlic, season with 1/4 teaspoon each salt and pepper, and cook, tossing occasionally, until beginning to soften, 2 to 3 minutes.
  7. Increase heat to medium-high, add lemon zest, and cook, tossing, until butter turns golden brown, about 2 minutes.
  8. Toss asparagus mixture with tortellini and tarragon.
  9. Serve with Parmesan, if desired.
