Buttermilk Loaf Cake

  1. Cream butter.
  2. Gradually add sugar, beating until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition. Blend in vanilla, lemon juice and rind.
  4. Sift together dry ingredients; add alternately with buttermilk to creamed mixture. Turn batter into 2 greased and floured 9 x 5 x 3-inch loaf pans. Bake in 350u0b0 oven for 1 hour and 10 minutes or until wooden pick inserted in center comes out clean.
  5. Cool in pans 10 minutes; remove and continue cooling on racks.
