Buttermilk Loaf Cake
- 1 1/2 c. butter or margarine (at room temperature)
- 3 c. sugar
- 6 eggs
- 1 1/2 tsp. vanilla flavor
- 1 1/2 tsp. fresh lemon juice
- 1 Tbsp. grated lemon rind
- 4 1/2 c. sifted all-purpose flour
- 3/4 tsp. baking powder
- 3/4 tsp. baking soda
- 1 1/2 c. buttermilk
- Cream butter.
- Gradually add sugar, beating until light and fluffy.
- Add eggs, one at a time, beating well after each addition. Blend in vanilla, lemon juice and rind.
- Sift together dry ingredients; add alternately with buttermilk to creamed mixture. Turn batter into 2 greased and floured 9 x 5 x 3-inch loaf pans. Bake in 350u0b0 oven for 1 hour and 10 minutes or until wooden pick inserted in center comes out clean.
- Cool in pans 10 minutes; remove and continue cooling on racks.
