Gorgonzola Stuffed Bread
- 1 loaf Italian or French bread, split lengthwise
- 6 cups assorted sliced mushrooms, such as portabello, crimini and button
- 1 cup sliced green onions
- 2 cloves garlic, minced
- 1 Tbsp. olive oil
- 1 cup ATHENOS Crumbled Gorgonzola Cheese
- Scoop out center of bread loaf, leaving 1-inch thick shell.
- Cook and stir mushrooms, onions and garlic in olive oil until tender.
- Fill bread shell with mushroom mixture.
- Top with cheese.
- Wrap in foil.
- Bake at 400F for 15 to 20 minutes or until cheese is melted.
- Slice before serving.
