Marinated Cheese
- 12 cup olive oil
- 12 cup white balsamic vinegar
- 3 tablespoons chopped parsley
- 2 tablespoons coarse grain mustard
- 3 tablespoons pesto sauce
- 12 teaspoon black pepper
- 1 tablespoon minced garlic
- 1 (2 ounce) jar diced pimentos, drained
- 1 (8 ounce) package sharp cheddar cheese
- 8 ounces cream cheese
- Combine first eight ingredients in a bowl and blend together well to create a marinade.
- Slice cheddar block in 1/8 inch slices.
- Slice cream cheese block in 1/8 inch slices.
- Place cheeses in shallow baking dishes alternating cheddar and cream cheese slices.
- Pour marinade over cheese.
- Cover and marinate at least 24 hours.
- Serve by transferring sliced cheese on to platter.
- Pour marinade over top.
- Cooking time is marinating time.
- Garnish.
