Easy, Light Crab Cakes

  1. Combine all ingredients but olive oil in a bowl and stir until thoroughly combined.
  2. Heat a skillet on medium heat and add olive oil.
  3. While its heating, form the crab mixture into small patties you will get about 5 to 6 cakes.
  4. Place them in the skillet and cook until lightly golden brown, about 3-4 minutes on each side.
  5. Makes about 6 small crab cakes.
