Easy, Light Crab Cakes
- 1 pound Lump Crabmeat
- 8 whole Saltines, Crushed
- 1 Tablespoon Plain Greek Yogurt (or Mayo)
- 1 Tablespoon Mustard
- 1 whole Egg
- 1 pinch Cayenne Pepper
- Salt And Pepper, to taste
- 1 Tablespoon Olive Oil
- Combine all ingredients but olive oil in a bowl and stir until thoroughly combined.
- Heat a skillet on medium heat and add olive oil.
- While its heating, form the crab mixture into small patties you will get about 5 to 6 cakes.
- Place them in the skillet and cook until lightly golden brown, about 3-4 minutes on each side.
- Makes about 6 small crab cakes.
