Chili Con Queso

  1. Sautee onion and garlic in 1 Tablespoon olive oil.
  2. Add this mixture along with tomato, Ro-Tel, and can of chopped green chilies to your blender.
  3. Process until smooth.
  4. Set aside.
  5. Place cheese and evaporated milk in a large microwave-safe bowl.
  6. Microwave 90 seconds.
  7. Stir.
  8. Microwave in 2-minute intervals (stirring between intervals) until cheese has melted.
  9. Add vegetable puree to melted cheese.
  10. Stir well.
  11. Continue to heat queso in 30-second intervals until it is at the consistency you prefer.
  12. Serve with chips.
  13. Variation: Brown and season 1 pound hamburger or bulk sausage.
  14. Add to queso.
