Chili Con Queso
- 1 whole Medium Onion, Diced
- 3- 1/2 cloves Garlic, Minced
- 1 Tablespoon Olive Oil
- 1 can Ro-Tel Diced Tomatoes And Green Chilies (10 Oz)
- 1 whole Medium Tomato, Diced
- 1 can Chopped Green Chiles (4.5 Oz)
- 1- 1/2 cup Evaporated Milk
- 1 pound American Cheese
- Sautee onion and garlic in 1 Tablespoon olive oil.
- Add this mixture along with tomato, Ro-Tel, and can of chopped green chilies to your blender.
- Process until smooth.
- Set aside.
- Place cheese and evaporated milk in a large microwave-safe bowl.
- Microwave 90 seconds.
- Stir.
- Microwave in 2-minute intervals (stirring between intervals) until cheese has melted.
- Add vegetable puree to melted cheese.
- Stir well.
- Continue to heat queso in 30-second intervals until it is at the consistency you prefer.
- Serve with chips.
- Variation: Brown and season 1 pound hamburger or bulk sausage.
- Add to queso.
