Chicken Cacciatore

  1. Cut a
  2. broiler into small pieces.
  3. In a deep frying pan with a cover,
  4. heat
  5. 3 tablespoons olive oil; add chicken and brown until
  6. golden
  7. on
  8. all
  9. sides.
  10. (If desired, skin can be removed.) Add chopped onion, parsley, basil, salt and pepper. Brown together with chicken until onion is golden.
  11. Pour over all 1/2 cup
  12. wine
  13. (white
  14. or red).
  15. Cover and let simmer for about a minute;
  16. add
  17. tomatoes
  18. that have been crushed with a fork.
  19. Cover and simmer for 20 to 30 minutes or until chicken is tender. Makes 3 or 4 servings.
