Oven Roasted Mushroom Tapas with Goat Cheese

  1. Preheat the oven to 425 degrees F.
  2. In a large bowl combine the mushrooms, olive oil, garlic, and shallots.
  3. Season with salt and pepper.
  4. Lay mushrooms in one layer on a heavy sheet pan.
  5. Roast in the oven for 15 minutes, or until tender.
  6. Transfer mushrooms to a baking dish and drizzle with the chile oil, then top with crumbled goat cheese.
  7. Bake until the cheese is hot and starting to brown, about 15-20 minutes.
  8. Remove the mushroom mixture from the oven and garnish with the thyme leaves.
  9. Serve with crusty bread.
