Summery Bitter Melon Pickles
- 2 Bitter melon
- 100 ml Vinegar
- 3 tbsp Sugar
- 1 tsp Salt
- 2 Red chili pepper
- Prepare the bitter melon Cut the bitter melon in half vertically and use a spoon to scoop out the seeds.
- Cut into 5 mm slices.
- Sprinkle with salt (not listed) and let sit (about 30 minutes).
- Once wilted, set on a strainer and pour hot water on top (be careful of splatters).
- Place in a storage container, add the seasonings, and let the hot goya marinade.
- Enjoy it after half a day.
- I recommend chilling it in the refrigerator.
- The picture shows the pickles with 1/4 of a marinated sliced onion.
