Summery Bitter Melon Pickles

  1. Prepare the bitter melon Cut the bitter melon in half vertically and use a spoon to scoop out the seeds.
  2. Cut into 5 mm slices.
  3. Sprinkle with salt (not listed) and let sit (about 30 minutes).
  4. Once wilted, set on a strainer and pour hot water on top (be careful of splatters).
  5. Place in a storage container, add the seasonings, and let the hot goya marinade.
  6. Enjoy it after half a day.
  7. I recommend chilling it in the refrigerator.
  8. The picture shows the pickles with 1/4 of a marinated sliced onion.
